RAPINI
Italian Broccoli

Serves 4

Ingredients

  • 2 tablespoons olive oil
  • 4 cloves garlic, slivered
  • 3 bunches Rapini, cleaned, bottom third trimmed off, coarsely chopped
  • Salt and pepper to taste
  • 1 lemon, juiced

Method

Heat a large sauté pan until almost smoking over high heat. Add olive oil and garlic and cook for 10 seconds, until the garlic is just light brown but not burned. Add the rapini and season with salt and pepper.

Deglaze with the lemon; turn the heat to medium-low, cover and cook 4-5 minutes until tender and still bright green.
